- 1 cup quinoa, rinsed and drained
- 2 cups water or vegetable broth
- 1 cup cherry tomatoes, halved
- 1 cucumber, diced
- 1 bell pepper, diced
- 1/2 cup red onion, finely chopped
- 1 cup corn (fresh or canned)
- 1 can black beans, rinsed and drained
- 1/4 cup fresh cilantro, chopped
- Juice of 1 lime
- 3 tablespoons olive oil
- Salt and pepper to taste
Instructions
- In a medium saucepan, combine quinoa and water or vegetable broth. Bring to a boil, then reduce heat to low, cover, and simmer for 15 minutes, or until quinoa is fluffy and liquid is absorbed.
- In a large bowl, combine the cherry tomatoes, cucumber, bell pepper, red onion, corn, black beans, and cilantro.
- In a small bowl, whisk together lime juice, olive oil, salt, and pepper.
- Once quinoa is cooked, let it cool for a few minutes, then add it to the vegetable mixture.
- Pour the dressing over the salad and toss to combine. Serve immediately or refrigerate for up to 2 days.
