Instructions

  1. Boil the soba noodles according to package instructions, then rinse under cold water.
  2. In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and grated ginger.
  3. Combine the noodles, cucumber, carrot, bell pepper, and green onions in a large bowl.
