A quick and refreshing soba noodle salad with crisp vegetables and a savory dressing.
Ingredients

- 200g soba noodles
- 1 cucumber, julienned
- 1 carrot, julienned
- 1 red bell pepper, thinly sliced
- 2 green onions, chopped
- 3 tbsp soy sauce
- 1 tbsp rice vinegar
- 1 tbsp sesame oil
- 1 tsp honey
- 1 tsp grated ginger
- 1 tbsp sesame seeds
Instructions
- Boil the soba noodles according to package instructions, then rinse under cold water.
- In a bowl, whisk together soy sauce, rice vinegar, sesame oil, honey, and grated ginger.
- Combine the noodles, cucumber, carrot, bell pepper, and green onions in a large bowl.
- Pour the dressing over the salad and toss well.
- Sprinkle with sesame seeds before serving.
Notes
- Store leftovers in the fridge for up to 2 days.
- Add tofu or grilled chicken for extra protein.
