- 200g pasta of your choice (spaghetti, fettuccine, or penne)
- 2 tablespoons olive oil
- 3 cloves garlic, minced
- 1 cup cherry tomatoes, halved
- 1 cup spinach, fresh
- 1/2 cup heavy cream
- 1/4 cup grated Parmesan cheese
- Salt and pepper to taste
- Fresh basil leaves for garnish
- Optional: chili flakes for heat
Instructions
- Cook the pasta according to package instructions until al dente. Drain and set aside, reserving a little pasta water.
- In a large skillet, heat the olive oil over medium heat. Add the minced garlic and sauté until fragrant, about 1 minute.
- Add the cherry tomatoes and cook until they soften, about 3-5 minutes.
- Stir in the fresh spinach and cook until wilted, about 2 minutes.
- Pour in the heavy cream and bring to a gentle simmer. Add the cooked pasta and toss to combine, adding reserved pasta water as needed to reach desired consistency.
- Stir in the grated Parmesan cheese and season with salt, pepper, and chili flakes if using.
- Remove from heat and serve immediately, garnished with fresh basil leaves.
