- 1 onion, chopped
- 2 cloves garlic, minced
- 1 inch ginger, grated
- 1 bell pepper, chopped
- 2 tomatoes, diced
- 2 cups vegetable broth
- 1 can chickpeas, drained
- 2 carrots, sliced
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
Instructions
- Heat the oil in a large pot over medium heat.
- Add the onion, garlic, and ginger. Sauté until softened.
- Add the bell pepper and tomatoes. Cook for 5 minutes.
- Pour in the vegetable broth and bring to a boil.
- Add the chickpeas, carrots, cumin, paprika, salt, and pepper.
- Reduce heat and let simmer for 30 minutes.
- Stir occasionally and adjust seasoning.
- Serve hot with rice or bread.
