  • 4 medium beets, peeled and cut into wedges
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon garlic powder
  • 1 teaspoon fresh thyme or rosemary (optional)

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a large bowl, toss the beet wedges with olive oil, salt, black pepper, garlic powder, and herbs if using until fully coated.
  3. Place the beets in the air fryer basket in a single layer, making sure they are not overcrowded.
  4. Air fry the beets for 15-20 minutes, shaking the basket halfway through the cooking time to ensure even cooking.
  5. Once beets are fork-tender and slightly crispy on the edges, remove them from the air fryer.
  6. Serve warm as a side dish or in salads.
