Ingredients

- 2 cups shredded cooked chicken
- 1 cup shredded cheese (cheddar or Mexican blend)
- 1/2 cup salsa
- 1 teaspoon taco seasoning
- 8 small corn tortillas
- Cooking spray or olive oil
- Salt and pepper to taste
Instructions
- In a mixing bowl, combine shredded chicken, cheese, salsa, taco seasoning, salt, and pepper. Mix well.
- Warm the corn tortillas in the microwave for about 30 seconds to make them pliable.
- Spoon about 2 tablespoons of the chicken mixture onto the center of each tortilla. Roll them tightly and secure with a toothpick if needed.
- Preheat the air fryer to 400°F (200°C).
- Spray the taquitos lightly with cooking spray or brush with olive oil.
- Place the taquitos in the air fryer basket in a single layer, making sure they are not touching.
- Air fry for 8-10 minutes, or until the taquitos are golden brown and crispy.
- Serve hot with your favorite dipping sauce or toppings.
Notes
- You can use store-bought rotisserie chicken to save time.
- Feel free to customize the filling with your favorite ingredients, such as beans or corn.
- For extra crunch, you can air fry them for an additional 2-3 minutes.
