  • 1 pound large shrimp, peeled and deveined
  • 1 cup shredded coconut
  • 1 cup panko bread crumbs
  • 1/2 cup all-purpose flour
  • 2 large eggs
  • 1 teaspoon garlic powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Cooking spray

Instructions

  1. Preheat your air fryer to 400°F (200°C).
  2. In a shallow bowl, mix the flour, garlic powder, salt, and black pepper.
  3. In another bowl, beat the eggs.
  4. In a third bowl, combine the shredded coconut and panko bread crumbs.
  5. Dredge each shrimp in the flour mixture, then dip it in the egg, and finally coat it in the coconut and panko mixture.
  6. Place the coated shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
  7. Air fry the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.
  8. Serve immediately with your favorite dipping sauce.

Notes

  • For extra flavor, you can add a pinch of cayenne pepper to the flour mixture.
