- 1 pound large shrimp, peeled and deveined
- 1 cup shredded coconut
- 1 cup panko bread crumbs
- 1/2 cup all-purpose flour
- 2 large eggs
- 1 teaspoon garlic powder
- 1/2 teaspoon salt
- 1/4 teaspoon black pepper
- Cooking spray
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a shallow bowl, mix the flour, garlic powder, salt, and black pepper.
- In another bowl, beat the eggs.
- In a third bowl, combine the shredded coconut and panko bread crumbs.
- Dredge each shrimp in the flour mixture, then dip it in the egg, and finally coat it in the coconut and panko mixture.
- Place the coated shrimp in a single layer in the air fryer basket. Spray lightly with cooking spray.
- Air fry the shrimp for 8-10 minutes, flipping halfway through, until golden brown and crispy.
- Serve immediately with your favorite dipping sauce.
Notes
- For extra flavor, you can add a pinch of cayenne pepper to the flour mixture.
- Make sure not to overcrowd the air fryer basket for even cooking.
