Deliciously fluffy and perfectly baked muffins made in an air fryer, ready in no time!
Ingredients

- 1 1/2 cups all-purpose flour
- 1/2 cup granulated sugar
- 2 tsp baking powder
- 1/2 tsp salt
- 1/2 cup milk
- 1/3 cup vegetable oil
- 1 large egg
- 1 tsp vanilla extract
- Optional: 1 cup of your favorite mix-ins (chocolate chips, blueberries, etc.)
Instructions
- In a mixing bowl, combine flour, sugar, baking powder, and salt.
- In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in any optional mix-ins.
- Preheat the air fryer at 320°F (160°C) for about 3-5 minutes.
- Line muffin cups with paper liners or spray with non-stick cooking spray.
- Fill each muffin cup about 2/3 full with batter.
- Place the muffin cups in the air fryer basket, making sure they are not touching.
- Cook at 320°F (160°C) for 10-15 minutes or until a toothpick inserted comes out clean.
- Let the muffins cool for a few minutes before removing from the air fryer. Enjoy!
Notes
- Cooking time may vary depending on your air fryer model.
- For best results, do not overcrowd the air fryer basket.
