Deliciously fluffy and perfectly baked muffins made in an air fryer, ready in no time!


Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 tsp salt
  • 1/2 cup milk
  • 1/3 cup vegetable oil
  • 1 large egg
  • 1 tsp vanilla extract
  • Optional: 1 cup of your favorite mix-ins (chocolate chips, blueberries, etc.)

Instructions

  1. In a mixing bowl, combine flour, sugar, baking powder, and salt.
  2. In another bowl, whisk together milk, vegetable oil, egg, and vanilla extract until well combined.
  3. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix. Fold in any optional mix-ins.
  4. Preheat the air fryer at 320°F (160°C) for about 3-5 minutes.
  5. Line muffin cups with paper liners or spray with non-stick cooking spray.
  6. Fill each muffin cup about 2/3 full with batter.
  7. Place the muffin cups in the air fryer basket, making sure they are not touching.
  8. Cook at 320°F (160°C) for 10-15 minutes or until a toothpick inserted comes out clean.
  9. Let the muffins cool for a few minutes before removing from the air fryer. Enjoy!

Notes

  • Cooking time may vary depending on your air fryer model.
  • For best results, do not overcrowd the air fryer basket.
