- 4 large eggs
- 1/4 cup milk
- 1/2 cup shredded cheese (cheddar, Monterey Jack, or your choice)
- 1/2 cup cooked and crumbled sausage or bacon (optional)
- 1/4 cup diced bell peppers
- 1/4 cup diced onions
- 4 large flour tortillas
- Salt and pepper to taste
- Cooking spray
Instructions
- In a bowl, whisk together the eggs, milk, salt, and pepper until well combined.
- Preheat your air fryer to 350°F (175°C).
- In a skillet over medium heat, cook the diced onions and bell peppers until softened, about 3-4 minutes. If using sausage or bacon, add it to the skillet to heat through.
- Add the egg mixture to the skillet and cook, stirring gently, until the eggs are scrambled and fully cooked, about 5-7 minutes. Remove from heat and stir in the cheese until melted.
- Lay a tortilla flat on a clean surface. Spoon some of the egg mixture onto the center of the tortilla, then fold in the sides and roll it up tightly to form a burrito. Repeat with the remaining tortillas and filling.
- Spray the air fryer basket with cooking spray. Place the burritos seam-side down in the basket, making sure they are not overcrowded.
- Air fry the burritos at 350°F (175°C) for 8-10 minutes, flipping halfway through, until they are golden brown and crispy.
- Remove from the air fryer and let cool for a minute before serving. Enjoy!
Notes
- Feel free to customize the fillings based on your preferences. You can add ingredients like spinach, mushrooms, or different types of cheese.
- For a spicier kick, add jalapeños or hot sauce to the egg mixture.
- These burritos can be made ahead of time and frozen. To reheat, simply air fry from frozen for about 12-15 minutes at 350°F (175°C).
