A quick and easy healthy dinner option made in the air fryer with chicken and a variety of colorful vegetables.

- 4 boneless, skinless chicken breasts
- 2 cups broccoli florets
- 1 cup bell peppers, sliced
- 1 cup zucchini, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Fresh parsley for garnish (optional)
Instructions
- Preheat the air fryer to 380°F (190°C).
- In a large bowl, toss the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
- Add the broccoli, bell peppers, and zucchini to the bowl and toss to combine.
- Place the chicken breasts in the air fryer basket and arrange the vegetables around them.
- Cook for 12-15 minutes, flipping the chicken halfway through, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
- Remove from the air fryer and let rest for a few minutes.
- Slice the chicken and serve with the roasted vegetables, garnished with fresh parsley if desired.
