Ingredients

  • 4 boneless, skinless chicken breasts
  • 2 cups broccoli florets
  • 1 cup bell peppers, sliced
  • 1 cup zucchini, sliced
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon paprika
  • Salt and pepper to taste
  • Fresh parsley for garnish (optional)

Instructions

  1. Preheat the air fryer to 380°F (190°C).
  2. In a large bowl, toss the chicken breasts with olive oil, garlic powder, onion powder, paprika, salt, and pepper until well coated.
  3. Add the broccoli, bell peppers, and zucchini to the bowl and toss to combine.
  4. Place the chicken breasts in the air fryer basket and arrange the vegetables around them.
  5. Cook for 12-15 minutes, flipping the chicken halfway through, or until the chicken is cooked through (internal temperature of 165°F or 75°C).
  6. Remove from the air fryer and let rest for a few minutes.
  7. Slice the chicken and serve with the roasted vegetables, garnished with fresh parsley if desired.
