- 2 cups broccoli florets
- 1 cup bell peppers, chopped (any color)
- 1 cup zucchini, sliced
- 1 cup carrots, sliced
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- 1 teaspoon Italian seasoning (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine all the chopped vegetables.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, pepper, and Italian seasoning if using.
- Toss everything together until the vegetables are evenly coated with the oil and seasonings.
- Place the vegetable mixture in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 10-12 minutes, shaking the basket halfway through the cooking time, until the vegetables are tender and slightly crispy.
- Remove from the air fryer and serve immediately.
Notes
- Feel free to use any combination of vegetables you like or have on hand.
- For added flavor, you can sprinkle some grated Parmesan cheese on top before serving.
