- 1 cup bell peppers, sliced (mixed colors)
- 1 cup zucchini, sliced
- 1 cup cherry tomatoes, halved
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- Salt and pepper to taste
- Fresh herbs for garnish (optional)
Instructions
- Preheat your air fryer to 375°F (190°C).
- In a large bowl, combine the broccoli, bell peppers, zucchini, and cherry tomatoes.
- Drizzle the olive oil over the vegetables and sprinkle with garlic powder, onion powder, salt, and pepper. Toss to coat evenly.
- Place the vegetable mixture in the air fryer basket in a single layer. You may need to do this in batches depending on the size of your air fryer.
- Cook for 10-12 minutes, shaking the basket halfway through to ensure even cooking, until the vegetables are tender and slightly crispy.
- Remove from the air fryer and garnish with fresh herbs if desired. Serve warm.
