- 2 medium zucchinis, sliced into 1/2 inch rounds
- 2 medium yellow squash, sliced into 1/2 inch rounds
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon onion powder
- 1 teaspoon Italian seasoning
- Salt and pepper to taste
- Parmesan cheese for topping (optional)
Instructions
- Preheat your air fryer to 400°F (200°C).
- In a large bowl, combine the sliced zucchinis and yellow squash.
- Drizzle with olive oil and sprinkle with garlic powder, onion powder, Italian seasoning, salt, and pepper. Toss until the squash is evenly coated.
- Arrange the squash in a single layer in the air fryer basket. You may need to do this in batches depending on the size of your air fryer.
- Air fry for 10-12 minutes, shaking the basket halfway through, until the squash is tender and lightly browned.
- If desired, sprinkle with Parmesan cheese during the last 2 minutes of cooking to melt.
- Serve hot as a side dish or snack.
