- 1 cup all-purpose flour
- 1 1/2 cups granulated sugar
- 1/4 teaspoon salt
- 12 large egg whites, at room temperature
- 1 teaspoon cream of tartar
- 1 teaspoon vanilla extract
- 1 teaspoon almond extract
Instructions
- Preheat your oven to 350°F (175°C).
- In a medium bowl, sift together the flour, 3/4 cup of sugar, and salt; set aside.
- In a large mixing bowl, beat the egg whites on medium speed until foamy. Add the cream of tartar and continue beating until soft peaks form.
- Gradually add the remaining 3/4 cup of sugar, a tablespoon at a time, beating until stiff peaks form.
- Gently fold in the flour mixture, vanilla extract, and almond extract until just combined. Be careful not to overmix.
- Pour the batter into an ungreased 10-inch tube pan. Run a knife or spatula through the batter to remove any air bubbles.
- Bake for 30-35 minutes or until the cake is golden brown and springs back when lightly touched.
- Remove from the oven and invert the pan onto a wire rack. Let it cool completely before removing from the pan.
Notes
- Ensure egg whites are at room temperature for best volume.
- Do not grease the pan, as the batter needs to cling to the sides for proper rising.
- Serve with fresh fruit, whipped cream, or a dusting of powdered sugar.
