- 1 cup cherry tomatoes
- 1 cup bell peppers, diced
- 1 zucchini, sliced
- 1 red onion, cut into wedges
- 1 pound shrimp, peeled and deveined
- 12 ounces spicy sausage, cut into bite-sized pieces
- 1/4 cup olive oil
- 2 tablespoons balsamic vinegar
- 1 teaspoon garlic powder
- 1 teaspoon paprika
- Salt and pepper to taste
- Skewers (wooden or metal)
Instructions
- Preheat your grill to medium-high heat.
- In a large bowl, combine cherry tomatoes, bell peppers, zucchini, and red onion.
- Drizzle with olive oil and balsamic vinegar, then season with garlic powder, paprika, salt, and pepper. Toss to coat the veggies evenly.
- Thread the marinated veggies onto skewers, alternating between different vegetables.
- In another bowl, toss the shrimp with olive oil, salt, and pepper.
- Skewer the shrimp onto separate skewers.
- Place the sausage pieces on skewers as well.
- Grill the veggie skewers for about 8-10 minutes, turning occasionally until tender and slightly charred.
- Grill the shrimp skewers for about 3-4 minutes on each side until cooked through.
- Grill the sausage skewers until heated through and slightly charred.
- Serve all skewers on a platter for guests to enjoy.
Notes
- Feel free to customize the vegetables based on your preference or what’s in season.
- If using wooden skewers, soak them in water for 30 minutes before grilling to prevent burning.
