Ingredients

- 3 lbs beef short ribs
- 2 cups apple cider
- 1 onion, chopped
- 2 carrots, diced
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1 tsp black pepper
- 1 tsp thyme
Instructions
- Preheat oven to 325°F.
- Season short ribs with salt and pepper.
- Heat olive oil in a Dutch oven and sear ribs on all sides.
- Remove ribs and sauté onions, carrots, and garlic.
- Return ribs to the pot, add apple cider and thyme.
- Cover and braise in the oven for 3 hours.
- Serve hot.
