- 2 cups all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1 teaspoon ground cinnamon
- 1/2 cup granulated sugar
- 1/4 cup brown sugar, packed
- 2 large eggs
- 1/2 cup sour cream
- 1 teaspoon vanilla extract
- 2 medium apples, peeled, cored, and diced
- Vegetable oil for frying
- Powdered sugar for dusting
Instructions
- In a large bowl, whisk together the flour, baking powder, salt, cinnamon, granulated sugar, and brown sugar.
- In a separate bowl, beat the eggs, then stir in the sour cream and vanilla extract until smooth.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Gently fold in the diced apples.
- Heat about 2 inches of vegetable oil in a deep pot or fryer to 375°F (190°C).
- Using a spoon or an ice cream scoop, drop batter into the hot oil, being careful not to overcrowd the pot.
- Fry the fritters for 2-3 minutes on each side, or until they are golden brown.
- Remove the fritters from the oil and drain on paper towels.
- While still warm, dust with powdered sugar before serving.
