  • 1 cup apricot preserves
  • 1/4 cup soy sauce
  • 1/4 cup Dijon mustard
  • 1 tablespoon minced garlic
  • 1 teaspoon ground ginger
  • Salt and pepper to taste
  • 1 tablespoon olive oil
  • Chopped green onions for garnish

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a bowl, mix together the apricot preserves, soy sauce, Dijon mustard, minced garlic, and ground ginger until well combined.
  3. Season the chicken breasts with salt and pepper.
  4. Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown.
  5. Pour the apricot mixture over the chicken, making sure each piece is well coated.
  6. Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
  7. Remove from the oven and let the chicken rest for a few minutes before serving.
  8. Garnish with chopped green onions and serve with rice or vegetables.
