- 4 boneless, skinless chicken breasts
- 1 cup apricot preserves
- 1/4 cup soy sauce
- 1/4 cup Dijon mustard
- 1 tablespoon minced garlic
- 1 teaspoon ground ginger
- Salt and pepper to taste
- 1 tablespoon olive oil
- Chopped green onions for garnish
Instructions
- Preheat your oven to 375°F (190°C).
- In a bowl, mix together the apricot preserves, soy sauce, Dijon mustard, minced garlic, and ground ginger until well combined.
- Season the chicken breasts with salt and pepper.
- Heat olive oil in a large oven-safe skillet over medium-high heat. Add the chicken breasts and sear for about 3-4 minutes on each side until golden brown.
- Pour the apricot mixture over the chicken, making sure each piece is well coated.
- Transfer the skillet to the preheated oven and bake for 25-30 minutes, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C).
- Remove from the oven and let the chicken rest for a few minutes before serving.
- Garnish with chopped green onions and serve with rice or vegetables.
Notes
- For added flavor, marinate the chicken in the apricot mixture for a few hours before cooking.
