- 6 cups fresh apricots, pitted and halved
- 1 cup granulated sugar, divided
- 1 tablespoon lemon juice
- 1 teaspoon vanilla extract
- 1 cup all-purpose flour
- 1 tablespoon baking powder
- 1/2 teaspoon salt
- 1/2 cup milk
- 1/3 cup unsalted butter, melted
- 1 teaspoon ground cinnamon (optional)
Instructions
- Preheat your oven to 350°F (175°C).
- In a large mixing bowl, combine the apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss to coat the apricots evenly. Pour the mixture into a greased 9×13 inch baking dish.
- In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
- Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
- Pour the batter over the apricot mixture in the baking dish, spreading it evenly.
- Sprinkle ground cinnamon on top if desired.
- Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted into the batter comes out clean.
- Let it cool for a few minutes before serving. Enjoy warm with ice cream or whipped cream!
Notes
- You can substitute fresh apricots with canned or frozen apricots, but ensure they are well-drained if using canned.
- Feel free to add a pinch of nutmeg for extra flavor.
