  • 1/2 cup milk

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. In a large mixing bowl, combine the apricots, 1/2 cup of sugar, lemon juice, and vanilla extract. Toss to coat the apricots evenly. Pour the mixture into a greased 9×13 inch baking dish.
  3. In another bowl, whisk together the flour, baking powder, salt, and remaining 1/2 cup of sugar.
  4. Add the milk and melted butter to the dry ingredients and stir until just combined. Do not overmix.
  5. Pour the batter over the apricot mixture in the baking dish, spreading it evenly.
  6. Sprinkle ground cinnamon on top if desired.
  7. Bake in the preheated oven for 40-45 minutes, or until the cobbler is golden brown and a toothpick inserted into the batter comes out clean.
