A delicious and elegant apricot tart perfect for any occasion. This tart features a buttery crust filled with fresh apricots and a hint of almond flavor.

- 1 1/2 cups all-purpose flour
- 1/2 cup unsalted butter, softened
- 1/4 cup granulated sugar
- 1/4 teaspoon salt
- 1 large egg yolk
- 2 tablespoons cold water
- 6–8 fresh apricots, halved and pitted
- 1/4 cup brown sugar
- 1 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1/4 cup sliced almonds (optional)
- Powdered sugar for dusting (optional)
Instructions
- Preheat the oven to 375°F (190°C).
- In a mixing bowl, combine the flour, butter, granulated sugar, and salt. Mix until the mixture resembles coarse crumbs.
- Add the egg yolk and cold water, and mix until a dough forms. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
- On a lightly floured surface, roll out the dough to fit a tart pan. Press the dough into the pan and trim any excess.
- In a separate bowl, toss the apricot halves with brown sugar, vanilla extract, and almond extract.
- Arrange the apricot halves cut-side up on the tart crust. Sprinkle sliced almonds over the top if desired.
- Bake in the preheated oven for 30-35 minutes, or until the apricots are tender and the crust is golden.
- Remove from the oven and let cool slightly. Dust with powdered sugar before serving.
Notes
- You can use canned or dried apricots in place of fresh if necessary.
- Serve with whipped cream or vanilla ice cream for an extra treat.
