Ingredients

  • 1 1/2 cups all-purpose flour
  • 1/2 cup unsalted butter, softened
  • 1/4 cup granulated sugar
  • 1/4 teaspoon salt
  • 1 large egg yolk
  • 2 tablespoons cold water
  • 68 fresh apricots, halved and pitted
  • 1/4 cup brown sugar
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1/4 cup sliced almonds (optional)
  • Powdered sugar for dusting (optional)

Instructions

  1. Preheat the oven to 375°F (190°C).
  2. In a mixing bowl, combine the flour, butter, granulated sugar, and salt. Mix until the mixture resembles coarse crumbs.
  3. Add the egg yolk and cold water, and mix until a dough forms. Shape the dough into a disk, wrap in plastic wrap, and refrigerate for 30 minutes.
  4. On a lightly floured surface, roll out the dough to fit a tart pan. Press the dough into the pan and trim any excess.
  5. In a separate bowl, toss the apricot halves with brown sugar, vanilla extract, and almond extract.
  6. Arrange the apricot halves cut-side up on the tart crust. Sprinkle sliced almonds over the top if desired.
  7. Bake in the preheated oven for 30-35 minutes, or until the apricots are tender and the crust is golden.
  8. Remove from the oven and let cool slightly. Dust with powdered sugar before serving.

Notes

  • You can use canned or dried apricots in place of fresh if necessary.
  • Serve with whipped cream or vanilla ice cream for an extra treat.
