Ingredients

  • 1 lb (450g) shrimp, peeled and deveined
  • 1 can (14 oz) coconut milk
  • 2 cups chicken or vegetable broth
  • 34 kaffir lime leaves
  • 1 stalk lemongrass, smashed and cut into 2-inch pieces
  • 1-inch piece galangal or ginger, sliced
  • 23 Thai chili peppers, sliced (optional)
  • 2 tbsp fish sauce
  • 1 tbsp lime juice
  • 1 tsp sugar
  • 1 cup mushrooms, sliced
  • 1 small tomato, cut into wedges
  • Fresh cilantro for garnish

Instructions

  1. In a pot, bring broth to a boil. Add lemongrass, galangal, and lime leaves. Simmer for 5 minutes.
  2. Add coconut milk and mushrooms. Cook for another 3-4 minutes.
  3. Stir in shrimp, tomato, fish sauce, lime juice, and sugar. Cook until shrimp turns pink, about 2-3 minutes.
  4. Remove lemongrass and galangal before serving.
  5. Garnish with cilantro and serve hot.
