Description

A hearty and flavorful beef stew slow-cooked to perfection with tender meat and rich gravy.


Ingredients

  • 2 lbs beef chuck, cut into cubes
  • 2 tbsp olive oil
  • 1 large onion, chopped
  • 3 garlic cloves, minced
  • 4 carrots, sliced
  • 3 potatoes, diced
  • 2 cups beef broth
  • 1 cup dark beer
  • 2 tbsp tomato paste
  • 1 tsp thyme
  • 1 tsp rosemary
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat.
  2. Brown the beef cubes on all sides, then remove and set aside.
  3. Add onions and garlic to the pot, sauté until softened.
  4. Return the beef to the pot, add carrots, potatoes, beef broth, beer, tomato paste, thyme, and rosemary.
  5. Bring to a simmer, then cover and cook on low heat for 2-3 hours until beef is tender.
  6. Season with salt and pepper before serving.

Notes

  • For best results, use dark Belgian beer.
  • Serve with crusty bread.
  • Can be made in a slow cooker on low for 6-8 hours.
