A hearty and flavorful beef stew slow-cooked to perfection with tender meat and rich gravy.
Ingredients

- 2 lbs beef chuck, cut into cubes
- 2 tbsp olive oil
- 1 large onion, chopped
- 3 garlic cloves, minced
- 4 carrots, sliced
- 3 potatoes, diced
- 2 cups beef broth
- 1 cup dark beer
- 2 tbsp tomato paste
- 1 tsp thyme
- 1 tsp rosemary
- Salt and pepper to taste
Instructions
- Heat olive oil in a large pot over medium heat.
- Brown the beef cubes on all sides, then remove and set aside.
- Add onions and garlic to the pot, sauté until softened.
- Return the beef to the pot, add carrots, potatoes, beef broth, beer, tomato paste, thyme, and rosemary.
- Bring to a simmer, then cover and cook on low heat for 2-3 hours until beef is tender.
- Season with salt and pepper before serving.
Notes
- For best results, use dark Belgian beer.
- Serve with crusty bread.
- Can be made in a slow cooker on low for 6-8 hours.
