- 4 lbs chicken thighs and drumsticks
- 1 cup pineapple juice
- 1/2 cup soy sauce
- 1/2 cup brown sugar
- 1/4 cup ketchup
- 1/4 cup rice vinegar
- 3 cloves garlic, minced
- 1 tbsp fresh ginger, grated
- 1 tsp sesame oil
Instructions
- In a bowl, mix pineapple juice, soy sauce, brown sugar, ketchup, rice vinegar, garlic, ginger, and sesame oil.
- Place chicken in a resealable bag and pour half the marinade over it. Refrigerate for at least 2 hours.
- Reserve the remaining marinade for basting.
- Preheat grill to medium-high heat.
- Grill chicken for 5-7 minutes per side, basting frequently with reserved marinade.
- Cook until internal temperature reaches 165°F.
- Serve hot with extra sauce.
