Ingredients

  • 1/2 cup granulated sugar
  • 1/2 cup brown sugar, packed

  • 1 cup semi-sweet chocolate chips
  • 1 cup rice cereal
  • 1/2 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
  2. In a large bowl, combine the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and creamy.
  3. Fold in the chocolate chips and rice cereal until well combined.
  4. Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
  5. Bake for 8-10 minutes or until the edges are set but the centers are still soft.
  6. Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
  7. Once cooled, roll the cookies in powdered sugar before serving.
