These Avalanche Cookies are a delicious combination of chocolate, peanut butter, and rice cereal, resulting in a crunchy and chewy treat that’s sure to satisfy your sweet tooth.

- 1 cup creamy peanut butter
- 1/2 cup granulated sugar
- 1/2 cup brown sugar, packed
- 1 large egg
- 1 teaspoon vanilla extract
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1 cup semi-sweet chocolate chips
- 1 cup rice cereal
- 1/2 cup powdered sugar (for rolling)
Instructions
- Preheat your oven to 350°F (175°C) and line a baking sheet with parchment paper.
- In a large bowl, combine the peanut butter, granulated sugar, brown sugar, egg, vanilla extract, baking soda, and salt. Mix until smooth and creamy.
- Fold in the chocolate chips and rice cereal until well combined.
- Using a cookie scoop or tablespoon, drop the cookie dough onto the prepared baking sheet, spacing them about 2 inches apart.
- Bake for 8-10 minutes or until the edges are set but the centers are still soft.
- Remove from the oven and let the cookies cool on the baking sheet for 5 minutes before transferring them to a wire rack to cool completely.
- Once cooled, roll the cookies in powdered sugar before serving.
Notes
- For a richer flavor, you can add more chocolate chips or use milk chocolate chips.
- These cookies can be stored in an airtight container at room temperature for up to a week.
