- 2 ripe avocados
- 4 large eggs
- Salt and pepper to taste

Instructions
- Preheat your oven to 425°F (220°C).
- Cut the avocados in half and remove the pit. Scoop out a little extra flesh to create enough space for the egg.
- Place the avocado halves in a baking dish, ensuring they are stable. You can use crumpled foil to help keep them upright.
- Crack an egg into each avocado half. If the egg is too large, you can discard a little of the white to ensure it fits.
- Season with salt and pepper. If using, sprinkle cheese on top.
- Bake in the preheated oven for 12-15 minutes, or until the egg whites are set but the yolks are still slightly runny.
- Remove from the oven and let cool for a minute. Garnish with chopped herbs before serving.
