Ingredients

  • 4 lobster tails (68 oz each)
  • 1/2 cup unsalted butter, melted
  • 4 cloves garlic, minced
  • 1 tbsp fresh parsley, chopped
  • 1 tbsp fresh chives, chopped
  • 1 tsp lemon juice
  • Salt and pepper to taste
  • 4 large potatoes, peeled and cubed
  • 1/4 cup milk
  • 2 tbsp butter
  • 1/4 cup sour cream
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cut the top of each lobster tail shell lengthwise and lift the meat out, leaving it attached at the base.
  3. Place lobster tails on a baking sheet.
  4. Mix melted butter, garlic, parsley, chives, lemon juice, salt, and pepper in a bowl.
  5. Brush half of the garlic herb butter over the lobster tails.
  6. Bake for 12-15 minutes until lobster meat is opaque.
  7. While lobster bakes, boil potatoes in salted water until tender.
  8. Drain potatoes and mash with milk, butter, sour cream, salt, and pepper.
  9. Serve baked lobster tails with remaining garlic herb butter and mashed potatoes.
