- 2 lemons, thinly sliced
- 4 cloves garlic, minced

Instructions
- Preheat your oven to 400°F (200°C).
- In a baking dish, arrange the mackerel fillets skin-side down.
- Drizzle the olive oil over the fillets and rub them with minced garlic, salt, and black pepper.
- Place lemon slices on top of the mackerel fillets, ensuring some are placed inside the cavity if using whole fish.
- Sprinkle chopped parsley and thyme over the fillets if desired.
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork.
- Remove from the oven and let it rest for a few minutes before serving.
