- 1.5 lbs (680g) baby potatoes, halved
- 2 tbsp olive oil
- 2 tbsp Dijon mustard
- 1 lemon, juiced and zested
- 3 garlic cloves, minced
- 1 tbsp dried oregano
- 1/2 tsp salt
- 1/4 tsp black pepper
Instructions
- Preheat oven to 400°F (200°C).
- In a bowl, whisk olive oil, mustard, lemon juice, lemon zest, garlic, oregano, salt, and pepper.
- Toss potatoes in the marinade until evenly coated.
- Spread potatoes in a single layer on a baking sheet.
- Bake for 35-40 minutes, flipping halfway, until golden and crispy.
- Serve warm.

- Double the marinade for extra flavor.
- Garnish with fresh parsley if desired.
