This savory babka is a delightful twist on the traditional sweet version, featuring layers of dough filled with creamy mashed potatoes and spices.


Ingredients

  • 4 medium russet potatoes, peeled and cubed
  • 1/2 cup (120ml) milk
  • 4 tablespoons (56g) unsalted butter, melted
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • Salt and pepper to taste
  • 3 cups (360g) all-purpose flour
  • 1 packet (2 1/4 teaspoons) active dry yeast
  • 1/4 cup (50g) granulated sugar
  • 1 teaspoon salt
  • 2 large eggs
  • 1/4 cup (60ml) warm water
  • 1 tablespoon (15ml) olive oil for greasing
  • 1 egg, beaten for egg wash

Instructions

  1. Preheat your oven to 375°F (190°C).
  2. In a pot, boil the cubed potatoes until tender, about 15 minutes. Drain and mash them with milk, melted butter, garlic powder, onion powder, salt, and pepper. Set aside to cool.
  3. In a large mixing bowl, combine flour, yeast, sugar, and salt. In a separate bowl, whisk together eggs and warm water. Add egg mixture to the dry ingredients and mix until a dough forms.
  4. Knead the dough on a floured surface for about 5-7 minutes until smooth. Place in a greased bowl, cover with a damp towel, and let rise for 1 hour or until doubled in size.
  5. Once risen, roll out the dough into a rectangle about 1/4 inch thick. Spread the cooled mashed potato mixture evenly over the dough.
  6. Roll the dough tightly from the long side into a log. Cut the log in half lengthwise to expose the filling, then twist the two halves together.
  7. Place the twisted dough into a greased loaf pan. Cover and let rise for another 30 minutes.
  8. Brush the top with beaten egg for a golden finish.
  9. Bake in the preheated oven for 30-35 minutes, or until golden brown and cooked through.
  10. Allow to cool in the pan for 10 minutes before transferring to a wire rack to cool completely.

  • Feel free to add herbs like chives or parsley to the potato filling for extra flavor.
  • This babka can be served warm or at room temperature, making it a perfect side dish or snack.
