A simple low-carb baked stuffed peppers recipe that’s both delicious and easy to prepare.

- 4 large bell peppers (any color)
- 1 lb ground beef or turkey
- 1 small onion, diced
- 2 cloves garlic, minced
- 1 cup cauliflower rice
- 1 cup shredded cheese
- 1 tsp salt
- 1/2 tsp black pepper
- 1/2 tsp paprika
- 1 tbsp olive oil
- 1/4 cup fresh parsley, chopped
Instructions
- Preheat oven to 375°F (190°C).
- Cut the tops off the bell peppers and remove seeds. Place in a baking dish.
- Heat olive oil in a pan over medium heat. Add onion and garlic, sauté until softened.
- Add ground meat and cook until browned. Drain excess fat.
- Stir in cauliflower rice, salt, pepper, and paprika. Cook for 3 minutes.
- Remove from heat and mix in half the shredded cheese.
- Stuff the peppers with the meat mixture. Top with remaining cheese.
- Bake for 25-30 minutes until peppers are tender.
- Garnish with fresh parsley before serving.
Notes
- Use lean ground meat for a healthier option.
- For extra flavor, add a pinch of chili flakes.
- Store leftovers in an airtight container for up to 3 days.
