- 3 ripe bananas, mashed
- 2 cups all-purpose flour
- 1 tsp baking soda
- 1/2 tsp salt
- 1/2 cup unsalted butter, softened
- 1 cup granulated sugar
- 2 large eggs
- 1 tsp vanilla extract
- 1/2 cup buttermilk
- 8 oz cream cheese, softened
- 1/4 cup unsalted butter, softened
- 2 cups powdered sugar
- 1 tsp vanilla extract
Instructions
- Preheat oven to 350°F (175°C). Grease a 9×13-inch baking pan.
- In a bowl, mix flour, baking soda, and salt.
- In another bowl, beat butter and sugar until fluffy. Add eggs and vanilla, then mix well.
- Add mashed bananas and buttermilk, then blend.
- Gradually add dry ingredients to wet ingredients, mixing until combined.
- Pour batter into the pan and bake for 25-30 minutes or until a toothpick comes out clean.
- Let cake cool completely.
- For frosting, beat cream cheese and butter until smooth. Add powdered sugar and vanilla, then mix well.
- Spread frosting over the cooled cake.
Notes
- Use very ripe bananas for best flavor.
- If you don’t have buttermilk, mix 1/2 cup milk with 1/2 tbsp vinegar or lemon juice and let sit for 5 minutes.
- Store cake in the refrigerator if not serving immediately.
