Ingredients

  • 2 ripe bananas

Instructions

  1. Add the rolled oats to a blender and blend until they reach a flour-like consistency.
  2. Add the ripe bananas, milk, eggs, baking powder, vanilla extract, and salt to the blender.
  3. Blend until the mixture is smooth and well combined.
  4. Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
  5. Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.
  6. Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
  7. Flip the pancakes and cook for another 2-3 minutes until golden brown.
  8. Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
  9. Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
