- 1 cup rolled oats
- 2 ripe bananas
- 1 cup milk (dairy or non-dairy)
- 2 large eggs
- 1 teaspoon baking powder
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon salt
- Butter or oil for cooking
Instructions
- Add the rolled oats to a blender and blend until they reach a flour-like consistency.
- Add the ripe bananas, milk, eggs, baking powder, vanilla extract, and salt to the blender.
- Blend until the mixture is smooth and well combined.
- Heat a non-stick skillet or griddle over medium heat and add a little butter or oil.
- Pour about 1/4 cup of the pancake batter onto the skillet for each pancake.
- Cook until bubbles form on the surface of the pancakes and the edges look set, about 2-3 minutes.
- Flip the pancakes and cook for another 2-3 minutes until golden brown.
- Repeat with the remaining batter, adding more butter or oil to the skillet as needed.
- Serve warm with your favorite toppings such as maple syrup, fresh fruit, or yogurt.
Notes
- For extra flavor, you can add cinnamon or nutmeg to the batter.
- These pancakes freeze well, so make a batch and store them for quick breakfasts later.
- Adjust the thickness of the batter by adding more milk for thinner pancakes or reducing the milk for thicker pancakes.
