- 2 ripe bananas, mashed
- 1 cup rolled oats
- 1/2 cup milk
- 1/4 cup honey
- 1 egg
- 1 tsp baking powder
- 1/2 tsp cinnamon
- 1/4 tsp salt
Instructions
- Preheat your oven to 375°F (190°C) and line a muffin tin with paper liners.
- In a bowl, mix the mashed bananas, rolled oats, milk, honey, and egg until well combined.
- Add the baking powder, cinnamon, and salt to the mixture and stir until evenly distributed.
- Spoon the batter into the prepared muffin tin, filling each cup about 3/4 full.
- Bake for 18-20 minutes or until a toothpick inserted into the center comes out clean.
- Allow the muffins to cool in the tin for 5 minutes before transferring to a wire rack.
Notes
- Use very ripe bananas for natural sweetness.
- These muffins can be stored in an airtight container for up to 3 days.
- For a vegan version, replace the egg with a flax egg and use plant-based milk.
