Description

Ingredients

  • 1 cup mashed ripe bananas (about 23 bananas)
  • 1 cup grated zucchini (about 1 medium zucchini)
  • 1 cup grated carrots (about 2 medium carrots)
  • 2 large eggs
  • 1/2 cup vegetable oil or melted coconut oil
  • 1/2 cup brown sugar
  • 1/2 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 2 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/2 teaspoon ground nutmeg (optional)
  • 1/2 cup chopped walnuts or pecans (optional)
  • 1/2 cup chocolate chips (optional)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a muffin tin with paper liners or grease with non-stick spray.
  2. In a large mixing bowl, combine mashed bananas, grated zucchini, grated carrots, eggs, oil, brown sugar, granulated sugar, and vanilla extract. Mix until well combined.
  3. In another bowl, whisk together flour, baking soda, baking powder, salt, cinnamon, and nutmeg if using.
  4. Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Be careful not to overmix.
  5. Fold in nuts and chocolate chips if desired.
  6. Divide the batter evenly among the prepared muffin cups, filling each about 2/3 full.
  7. Bake for 18-22 minutes or until a toothpick inserted into the center comes out clean.
  8. Allow muffins to cool in the pan for 5 minutes before transferring to a wire rack to cool completely.
