Ingredients

  • 2 boneless, skinless chicken
  • 1 cup flour
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 egg
  • 1/4 cup milk
  • 1/2 cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha
  • 1 tsp honey
  • 2 cups cooked rice
  • 1 cup shredded lettuce
  • 1/2 cup diced cucumber
  • 1/4 cup chopped green onions
  • 1 tbsp sesame seeds

Instructions

  1. Cut chicken into bite-sized pieces.
  2. Mix flour, salt, and pepper in a bowl.
  3. Whisk egg and milk in another bowl.
  4. Coat chicken in flour, dip in egg mixture, then coat again in flour.
  5. Fry chicken in hot oil until golden and crispy.
  6. Mix mayonnaise, sweet chili sauce, sriracha, and honey in a bowl.
  7. Toss fried chicken in the sauce.
  8. Assemble bowls with rice, lettuce, cucumber, and chicken.
  9. Top with green onions and sesame seeds.

Notes

  • Use panko breadcrumbs for extra crunch.
  • Adjust sriracha for more or less heat.
  • Serve immediately for best texture.
