Delicious and spicy Bang Bang Shrimp served over rice with fresh vegetables for a perfect bowl meal.

- 1 pound shrimp, peeled and deveined
- 1 cup cornstarch
- 2 eggs, beaten
- 1 cup panko breadcrumbs
- 1/2 cup mayonnaise
- 1/4 cup sweet chili sauce
- 1 tablespoon Sriracha (adjust to taste)
- 2 cups cooked rice (white or brown)
- 1 cup shredded lettuce
- 1 cup diced cucumbers
- 1 cup shredded carrots
- 2 green onions, sliced
- Lime wedges for serving
- Salt and pepper to taste
- Oil for frying
Instructions
- In a bowl, mix mayonnaise, sweet chili sauce, and Sriracha to create the Bang Bang sauce. Set aside.
- Season shrimp with salt and pepper. Dredge each shrimp in cornstarch, then dip into the beaten eggs, and finally coat with panko breadcrumbs.
- Heat oil in a large skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
- In a bowl, layer cooked rice, followed by shredded lettuce, cucumbers, carrots, and fried shrimp.
- Drizzle with Bang Bang sauce and garnish with sliced green onions.
- Serve with lime wedges on the side.
Notes
- Feel free to adjust the spiciness of the Bang Bang sauce by adding more or less Sriracha.
- You can substitute shrimp with chicken or tofu for different variations.
