Delicious and spicy Bang Bang Shrimp served over rice with fresh vegetables for a perfect bowl meal.


Ingredients

  • 1 pound shrimp, peeled and deveined
  • 1 cup cornstarch
  • 2 eggs, beaten
  • 1 cup panko breadcrumbs
  • 1/2 cup mayonnaise
  • 1/4 cup sweet chili sauce
  • 1 tablespoon Sriracha (adjust to taste)
  • 2 cups cooked rice (white or brown)
  • 1 cup shredded lettuce
  • 1 cup diced cucumbers
  • 1 cup shredded carrots
  • 2 green onions, sliced
  • Lime wedges for serving
  • Salt and pepper to taste
  • Oil for frying

Instructions

  1. In a bowl, mix mayonnaise, sweet chili sauce, and Sriracha to create the Bang Bang sauce. Set aside.
  2. Season shrimp with salt and pepper. Dredge each shrimp in cornstarch, then dip into the beaten eggs, and finally coat with panko breadcrumbs.
  3. Heat oil in a large skillet over medium-high heat. Fry the shrimp in batches until golden brown and cooked through, about 2-3 minutes per side. Remove and drain on paper towels.
  4. In a bowl, layer cooked rice, followed by shredded lettuce, cucumbers, carrots, and fried shrimp.
  5. Drizzle with Bang Bang sauce and garnish with sliced green onions.
  6. Serve with lime wedges on the side.

Notes

  • Feel free to adjust the spiciness of the Bang Bang sauce by adding more or less Sriracha.
  • You can substitute shrimp with chicken or tofu for different variations.
