Description
This Barbacoa Beef is tender, flavorful, and perfect for tacos, burritos, or on its own. Cooked low and slow, it’s infused with spices and citrus, making it a delicious addition to any meal.

- 3–4 lbs beef chuck roast
- 2 tablespoons olive oil
- 1 onion, chopped
- 4 cloves garlic, minced
- 1/4 cup apple cider vinegar
- 1/4 cup lime juice
- 1 tablespoon chipotle peppers in adobo sauce, chopped
- 1 tablespoon ground cumin
- 1 tablespoon dried oregano
- 1 teaspoon salt
- 1 teaspoon black pepper
- 1/2 cup beef broth or water
- Fresh cilantro, for garnish
- Lime wedges, for serving
Instructions
- In a large skillet, heat olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned. Remove from heat and set aside.
- In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.
- In a slow cooker, combine the seared beef, sautéed onion and garlic, apple cider vinegar, lime juice, chipotle peppers, cumin, oregano, salt, black pepper, and beef broth.
- Cover and cook on low for 8 hours or until the beef is tender and easily shredded with a fork.
- Once cooked, shred the beef using two forks and mix it with the juices in the slow cooker.
- Serve in tacos, burritos, or on its own, garnished with fresh cilantro and lime wedges.
