Description

This Barbacoa Beef is tender, flavorful, and perfect for tacos, burritos, or on its own. Cooked low and slow, it’s infused with spices and citrus, making it a delicious addition to any meal.


Ingredients

  • 34 lbs beef chuck roast
  • 2 tablespoons olive oil
  • 1 onion, chopped
  • 4 cloves garlic, minced
  • 1/4 cup apple cider vinegar
  • 1/4 cup lime juice
  • 1 tablespoon chipotle peppers in adobo sauce, chopped
  • 1 tablespoon ground cumin
  • 1 tablespoon dried oregano
  • 1 teaspoon salt
  • 1 teaspoon black pepper
  • 1/2 cup beef broth or water
  • Fresh cilantro, for garnish
  • Lime wedges, for serving

Instructions

  1. In a large skillet, heat olive oil over medium-high heat. Sear the beef chuck roast on all sides until browned. Remove from heat and set aside.
  2. In the same skillet, add the chopped onion and garlic. Sauté until the onion is translucent.
  3. In a slow cooker, combine the seared beef, sautéed onion and garlic, apple cider vinegar, lime juice, chipotle peppers, cumin, oregano, salt, black pepper, and beef broth.
  4. Cover and cook on low for 8 hours or until the beef is tender and easily shredded with a fork.
  5. Once cooked, shred the beef using two forks and mix it with the juices in the slow cooker.
  6. Serve in tacos, burritos, or on its own, garnished with fresh cilantro and lime wedges.
