Ingredients

  • 1 cup BBQ sauce
  • 2 cups cooked brown rice
  • 1 cup black beans, drained and rinsed
  • 1 cup corn, canned or frozen
  • 1 cup cherry tomatoes, halved
  • 1 avocado, diced
  • 1/2 cup red onion, diced
  • 1/2 cup cilantro, chopped
  • Salt and pepper to taste

Instructions

  1. In a medium bowl, combine shredded chicken and BBQ sauce. Mix well until chicken is evenly coated.
  2. In serving bowls, layer cooked brown rice as the base.
