A delicious BBQ chicken bowl loaded with tender chicken, fresh veggies, and a tangy BBQ sauce.
Ingredients

- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 2 cups cooked brown rice
- 1 cup black beans, drained and rinsed
- 1 cup corn, canned or frozen
- 1 cup cherry tomatoes, halved
- 1 avocado, diced
- 1/2 cup red onion, diced
- 1/2 cup cilantro, chopped
- Salt and pepper to taste
Instructions
- In a medium bowl, combine shredded chicken and BBQ sauce. Mix well until chicken is evenly coated.
- In serving bowls, layer cooked brown rice as the base.
- Top the rice with the BBQ chicken mixture.
- Add black beans, corn, cherry tomatoes, avocado, and red onion on top of the chicken.
- Sprinkle with chopped cilantro and season with salt and pepper to taste.
