- 2 cups cooked chicken, shredded
- 1 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/2 cup corn kernels
- 1/2 cup black beans, rinsed and drained
- 1/2 cup diced red bell pepper
- 1/4 cup diced red onion
- 1/2 teaspoon garlic powder
- 1/2 teaspoon smoked paprika
- 1/4 teaspoon salt
- 1/4 teaspoon black pepper
Instructions
- Preheat oven to 375°F (190°C).
- In a large bowl, mix chicken, BBQ sauce, corn, black beans, bell pepper, red onion, garlic powder, smoked paprika, salt, and black pepper.
- Transfer the mixture to a greased baking dish.
- Sprinkle shredded cheddar cheese evenly over the top.
- Bake for 20-25 minutes, or until the cheese is melted and bubbly.
- Let it cool slightly before serving.
Notes
- Use leftover rotisserie chicken for convenience.
- Adjust BBQ sauce amount to taste.
- Top with fresh cilantro or green onions before serving if desired.
