  • 8 oz elbow macaroni
  • 2 cups shredded cooked chicken
  • 1 cup BBQ sauce
  • 2 cups shredded cheddar cheese
  • 1 cup shredded mozzarella cheese
  • 1/2 cup milk
  • 1/4 cup sour cream
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste
  • 1/2 cup breadcrumbs (optional)
  • 2 tbsp olive oil (for drizzling, optional)

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the elbow macaroni according to the package instructions until al dente. Drain and set aside.
  3. In a large bowl, combine the shredded chicken and BBQ sauce. Mix until the chicken is well coated.
  4. In another bowl, mix the cooked macaroni, chicken mixture, cheddar cheese, mozzarella cheese, milk, sour cream, garlic powder, onion powder, salt, and pepper until well combined.
  5. Transfer the mixture to a greased 9×13 inch baking dish. If desired, sprinkle breadcrumbs on top for added crunch.
  6. Drizzle with olive oil if using.
  7. Bake in the preheated oven for 25-30 minutes, or until the cheese is bubbly and the top is golden brown.
  8. Remove from the oven and let it cool for a few minutes before serving.

Notes

  • Feel free to use any leftover chicken or rotisserie chicken for a quicker option.
  • You can adjust the amount of BBQ sauce according to your taste preference.
  • For a spicier kick, add jalapeños or a bit of hot sauce to the mixture.
