- 2 cups cooked chicken, shredded
- 1/2 cup BBQ sauce
- 1 cup shredded cheddar cheese
- 1/2 cup shredded mozzarella cheese
- 4 large flour tortillas
- 1/4 cup red onion, finely chopped
- 1/4 cup fresh cilantro, chopped
Instructions
- Mix shredded chicken with BBQ sauce in a bowl.
- Place a tortilla on a flat surface and sprinkle half of it with cheddar and mozzarella cheese.
- Spread the BBQ chicken mixture over the cheese, then top with red onion and cilantro.
- Fold the tortilla in half and press gently.
- Heat a skillet over medium heat and cook the quesadilla for 2-3 minutes on each side, until golden and crispy.
- Repeat with the remaining tortillas and filling.
- Cut into wedges and serve warm.
