- 2 large sweet potatoes
- 1 lb chicken breast
- 1/2 cup BBQ sauce
- 1 cup black beans
- 1 cup corn kernels
- 1/4 cup red onion, diced
- 1/4 cup cilantro, chopped
- 1 avocado, sliced
- 1 lime, cut into wedges
Instructions
- Preheat your oven to 400°F (200°C).
- Wash and pierce the sweet potatoes with a fork, then bake for 45-50 minutes until tender.
- While the sweet potatoes are baking, cook the chicken breast in a skillet over medium heat until fully cooked, about 6-7 minutes per side.
- Shred the cooked chicken and mix with BBQ sauce.
- Once the sweet potatoes are done, slice them open and fluff the insides with a fork.
- Fill each sweet potato with the BBQ chicken, black beans, corn, red onion, and cilantro.
- Top with avocado slices and a squeeze of lime juice.
