Instructions

  1. Preheat your smoker to 225°F (107°C).
  2. Rub the pork shoulder chunks generously with the BBQ rub, ensuring they are well coated.
  3. Place the pork in the smoker and smoke for about 4 to 6 hours, or until the internal temperature reaches 195°F (90°C).
  4. During the last hour of smoking, brush the pork with apple cider vinegar to keep it moist.
  5. Once done, remove the pork from the smoker and let it rest for 30 minutes before shredding.
  6. While the pork is resting, prepare the coleslaw by combining the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a large bowl. Toss until well combined.
  7. Serve the smoked pork on buns, topped with BBQ sauce and coleslaw. Add pickles if desired.
