Ingredients
Scale
- 2 lbs pork shoulder, trimmed and cut into chunks
- 1 cup BBQ rub (store-bought or homemade)
- 1 cup apple cider vinegar
- 1 cup BBQ sauce (your choice)
- 1 tbsp olive oil
- 1 lb coleslaw mix
- 1/2 cup mayonnaise
- 1 tbsp apple cider vinegar (for coleslaw)
- 1 tsp sugar (for coleslaw)
- Salt and pepper to taste
- Buns for serving (optional)
- Pickles for serving (optional)
Instructions
- Preheat your smoker to 225°F (107°C).
- Rub the pork shoulder chunks generously with the BBQ rub, ensuring they are well coated.
- Place the pork in the smoker and smoke for about 4 to 6 hours, or until the internal temperature reaches 195°F (90°C).
- During the last hour of smoking, brush the pork with apple cider vinegar to keep it moist.
- Once done, remove the pork from the smoker and let it rest for 30 minutes before shredding.
- While the pork is resting, prepare the coleslaw by combining the coleslaw mix, mayonnaise, apple cider vinegar, sugar, salt, and pepper in a large bowl. Toss until well combined.
- Serve the smoked pork on buns, topped with BBQ sauce and coleslaw. Add pickles if desired.
Notes
- For the best flavor, let the pork marinate with the BBQ rub overnight.
- Feel free to adjust the spices in the BBQ rub to suit your taste.
- You can also use different types of meat, such as brisket or ribs, for variety.
