Ingredients

  • 1 yellow bell pepper, cut into chunks
  • 1 zucchini, sliced
  • 1 yellow squash, sliced
  • 1 red onion, cut into wedges
  • 1 cup cherry tomatoes
  • 2 tablespoons olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon smoked paprika
  • Salt and pepper to taste
  • Fresh herbs (parsley or basil) for garnish

Instructions

  1. Preheat the grill to medium-high heat.
  2. In a large bowl, combine the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes.
  3. Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat the vegetables evenly.
