- 1 red bell pepper, cut into chunks
- 1 yellow bell pepper, cut into chunks
- 1 zucchini, sliced
- 1 yellow squash, sliced
- 1 red onion, cut into wedges
- 1 cup cherry tomatoes
- 2 tablespoons olive oil
- 1 teaspoon garlic powder
- 1 teaspoon smoked paprika
- Salt and pepper to taste
- Fresh herbs (parsley or basil) for garnish
Instructions
- Preheat the grill to medium-high heat.
- In a large bowl, combine the bell peppers, zucchini, yellow squash, red onion, and cherry tomatoes.
- Drizzle with olive oil and sprinkle with garlic powder, smoked paprika, salt, and pepper. Toss to coat the vegetables evenly.
- Thread the vegetables onto skewers or place them in a grill basket.
- Grill the vegetables for about 10-15 minutes, turning occasionally, until they are tender and have nice grill marks.
- Remove from the grill and garnish with fresh herbs before serving.
Notes
- Feel free to use any combination of your favorite vegetables.
- For added flavor, marinate the vegetables in olive oil and spices for 30 minutes before grilling.
