Ingredients

- 2 cups mixed beans, soaked overnight
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 carrots, diced
- 1 bell pepper, chopped
- 4 cups vegetable broth
- 1 teaspoon cumin
- 1 teaspoon paprika
- Salt and pepper to taste
- 2 tablespoons olive oil
Instructions
- Heat olive oil in a pot over medium heat.
- Add onion and garlic, sauté until soft.
- Stir in carrots and bell pepper, cook for 5 minutes.
- Add soaked beans, vegetable broth, cumin, and paprika.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Season with salt and pepper before serving.
