- 1 pound beef stew meat, cut into bite-sized pieces
- 2 tablespoons olive oil
- 1 onion, chopped
- 3 cloves garlic, minced
- 4 cups beef broth
- 2 cups egg noodles
- 2 carrots, sliced
- 1 teaspoon dried thyme
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 tablespoon Worcestershire sauce
- 2 tablespoons cornstarch mixed with 2 tablespoons water (optional for thickening)
- Chopped parsley for garnish
Instructions
- In a large pot or Dutch oven, heat the olive oil over medium-high heat. Add the beef stew meat and brown on all sides.
- Add the chopped onion and minced garlic to the pot, cooking until the onion is translucent.
- Pour in the beef broth and bring to a boil. Stir in the carrots, thyme, salt, pepper, and Worcestershire sauce.
- Reduce the heat to low and cover the pot. Simmer for about 1.5 hours, or until the beef is tender.
- Add the egg noodles to the pot and cook according to package instructions until tender, about 7-10 minutes.
- If you prefer a thicker broth, stir in the cornstarch mixture and cook for an additional 2-3 minutes until thickened.
- Serve hot, garnished with chopped parsley.
