A hearty and nutritious beef barley soup perfect for cold days.
Ingredients

- 1 lb beef stew meat, cubed
- 1 cup pearl barley
- 4 cups beef broth
- 2 cups water
- 1 onion, diced
- 2 carrots, sliced
- 2 celery stalks, chopped
- 2 cloves garlic, minced
- 1 tbsp olive oil
- 1 tsp salt
- 1/2 tsp black pepper
- 1 bay leaf
Instructions
- Heat olive oil in a large pot over medium heat.
- Add beef cubes and brown on all sides.
- Add onions, carrots, celery, and garlic. Cook until softened.
- Pour in beef broth and water. Stir in barley, salt, pepper, and bay leaf.
- Bring to a boil, then reduce heat and simmer for 1 hour.
- Remove bay leaf before serving.
Notes
- You can substitute beef broth with vegetable broth for a lighter flavor.
- Store leftovers in an airtight container for up to 3 days.
