Ingredients

  • 1 lb ground beef
  • 1 onion, chopped
  • 2 cloves garlic, minced
  • 2 cups beef broth
  • 1 can (14.5 oz) diced tomatoes
  • 2 cups mixed vegetables (carrots, peas, corn)
  • 1 tsp dried oregano
  • 1 tsp dried thyme
  • Salt and pepper to taste
  • 4 cups cooked egg noodles
  • 1 cup shredded cheddar cheese

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
  3. Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
  4. Stir in the beef broth, diced tomatoes, mixed vegetables, oregano, thyme, salt, and pepper.
  5. Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
  6. In a large mixing bowl, combine the cooked egg noodles with the beef mixture.
  7. Pour the mixture into a greased casserole dish and top with shredded cheddar cheese.
  8. Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
  9. Let it cool for a few minutes before serving.

Notes

  • Feel free to add your favorite vegetables to the casserole.
  • This casserole can be made ahead of time and stored in the refrigerator for up to 2 days.
  • You can also freeze the casserole for up to 3 months. Thaw in the refrigerator before baking.
