A hearty and comforting beef casserole that’s perfect for family dinners.
Ingredients

- 1 lb ground beef
- 1 onion, chopped
- 2 cloves garlic, minced
- 2 cups beef broth
- 1 can (14.5 oz) diced tomatoes
- 2 cups mixed vegetables (carrots, peas, corn)
- 1 tsp dried oregano
- 1 tsp dried thyme
- Salt and pepper to taste
- 4 cups cooked egg noodles
- 1 cup shredded cheddar cheese
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet, brown the ground beef over medium heat. Drain any excess fat.
- Add the chopped onion and minced garlic to the skillet and sauté until the onion is translucent.
- Stir in the beef broth, diced tomatoes, mixed vegetables, oregano, thyme, salt, and pepper.
- Bring the mixture to a boil, then reduce the heat and simmer for 10 minutes.
- In a large mixing bowl, combine the cooked egg noodles with the beef mixture.
- Pour the mixture into a greased casserole dish and top with shredded cheddar cheese.
- Bake in the preheated oven for 25-30 minutes or until the cheese is bubbly and golden.
- Let it cool for a few minutes before serving.
Notes
- Feel free to add your favorite vegetables to the casserole.
- This casserole can be made ahead of time and stored in the refrigerator for up to 2 days.
- You can also freeze the casserole for up to 3 months. Thaw in the refrigerator before baking.
