- 1 pound ground beef
- 1 small onion, chopped
- 2 cloves garlic, minced
- 1 can (15 oz) tomato sauce
- 1 can (10 oz) enchilada sauce
- 1 teaspoon ground cumin
- 1 teaspoon chili powder
- 8 corn tortillas
- 2 cups shredded cheese (cheddar or Mexican blend)
- 1/4 cup chopped fresh cilantro (optional)
- Salt and pepper to taste
Instructions
- Preheat the oven to 350°F (175°C).
- In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are soft. Drain excess fat.
- Stir in the tomato sauce, enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
- Warm the tortillas in a dry skillet or microwave until pliable.
- Spread a small amount of the beef mixture on each tortilla, roll them up, and place seam-side down in a greased baking dish.
- Pour the remaining beef mixture over the rolled tortillas and sprinkle with cheese.
- Bake for 20-25 minutes, until the cheese is melted and bubbly.
- Garnish with cilantro if desired and serve hot.
Notes
- Feel free to add black beans or corn to the beef mixture for extra flavor and texture.
- For a spicier kick, add diced jalapeños to the beef mixture.
- You can substitute ground turkey or chicken for a lighter option.
