  • 8 corn tortillas
  • 2 cups shredded cheese (cheddar or Mexican blend)
  • 1/4 cup chopped fresh cilantro (optional)
  • Salt and pepper to taste

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a large skillet over medium heat, cook the ground beef, onion, and garlic until the beef is browned and the onions are soft. Drain excess fat.
  3. Stir in the tomato sauce, enchilada sauce, cumin, chili powder, salt, and pepper. Simmer for 5 minutes.
  4. Warm the tortillas in a dry skillet or microwave until pliable.
  5. Spread a small amount of the beef mixture on each tortilla, roll them up, and place seam-side down in a greased baking dish.
  6. Pour the remaining beef mixture over the rolled tortillas and sprinkle with cheese.
