Ingredients

- 1 package (20 oz) cheese tortellini
- 1 can (10 oz) red enchilada sauce
- 1 cup shredded cheddar cheese
- 1/2 cup diced onion
- 1 clove garlic, minced
- 1 tsp cumin
- 1/2 tsp chili powder
- 1/4 tsp salt
- 2 tbsp olive oil
Instructions
- Cook tortellini according to package instructions. Drain and set aside.
- In a skillet, heat olive oil over medium heat. Add onion and garlic, sauté until soft.
- Add ground beef, cumin, chili powder, and salt. Cook until beef is browned.
- Stir in enchilada sauce and simmer for 5 minutes.
- Mix cooked tortellini into the beef mixture.
- Top with shredded cheese and cover until cheese melts.
- Serve warm.
